The starter wakes
Yesterday’s starter is given flour and water. Within an hour it begins to rise; from the smell you can tell how the day’s bread will turn out. No dry yeast, no accelerator — what we feed is alive.
We’re not a chain and we have no branches. We have one bakery in Muratpaşa and it lights up at the same hour every morning.

In our trade the order is kept in hours, not numbers. We start while the street sleeps; by the time you walk in, half the day is already behind us.

Flour, water, salt and starter. There is no fourth ingredient. The dough is brought together by hand, then left alone for hours. That waiting deepens the flavour and makes the bread easier to digest.
The door opens. Loaves, poğaça, açma and the first round of simit go behind the glass. The first customer usually comes from the building across the street and always buys the same thing.
Once the bread is done, the pastry side begins. Cream is whipped, layers are stacked, the names on the orders are piped. This work wants quiet, so it comes after the morning noise.
In the afternoon the simit and poğaça trays go back into the oven. They have to be ready for the school run. Nothing left from the morning is mixed into this round.
Whatever remains on the counter goes to the neighbourhood soup kitchen that same evening. The next morning everything starts from zero — because if you sell something as fresh, you can’t sell yesterday’s.
Everything is baked that morning and sold that day. That’s why some items run out in the afternoon — we see that as a promise, not a fault.
Thickeners, preservatives, ready-made cream mixes, frozen dough. None of it enters the kitchen. An ingredient list should be short and readable.
One shop, one oven. We don’t multiply to grow; we fill the same counter with the same care every day.
